What is a nutmeg?

The nutmeg tree (Myrsitica fragrans Houttuyn) is a member of the Myristicaceae [mir is' ti ka' see ee], a family of tropical evergreens native to southeastern Asia, northern Australia, and the Pacific Islands. The nutmeg tree is apparently native to the Molucca Islands in the greater Malaysian Archipelago. Nutmeg trees grow 10 to 20 meters (30 to 60 feet) in height. The trees are usually dioecious, staminate (male) and pistillate (female) flowers are borne on separate plants; a few trees are monoecious known to bear both flowers.

The female trees bear tough fleshy-fibrous edible fruit, called nutmeg pods, similar in size and appearance to apricots. The fruit is dehiscent; when ripe, the yellow fruit splits into halves, exposing and eventually dropping the single seed. (Hortus Third, Staff of Liberty Hyde Bailey Hortorium, Cornell University, 1976)

The shell of the seed is partially covered with a thin fleshy red net-like tissue, the aril. The dried aril is the spice mace. When the seed is thoroughly dried, the kernel rattles within the shell. The shell is cracked and the olive-shaped seed removed. The kernel of the seed is the spice nutmeg.

The rich, warm flavors of mace and nutmeg are due the present of aromatic oils, a complex of terpenes and phenylpropanols. Mace is about twelve percent essential oils, nutmeg about ten percent. Mace is considered milder than nutmeg and has a slightly different composition of oils. ("Myristica (USP)-Nutmeg", H.W. Felter and J.U. Lloyd, King's American Dispensatory, 1898)

The essential oils of mace and nutmeg are highly volatile--they quickly evaporate from the spices. Mace and nutmeg should be kept whole until they are to be used. In the 17th and 18th centuries, freshly grated nutmeg was so popular that the fashionably-rich French and English carried silver nutmeg holders that when opened offered a small grater. Along with M.F.K. Fisher and Julia Child, Elizabeth David changed the way we think about and prepare food. Her nine books, written with impeccable wit and considerable brilliance, helped educate the taste (and taste buds) of the postwar generation. Elizabeth David, who died in 1992, was a very private person who seldom gave interviews.
